It's tempting to think of food trucks as a lifestyle category — a thing that happens at festivals, a backdrop for Instagram, a slightly more interesting version of lunch. The economics that make a truck possible

Opening a brick-and-mortar restaurant in any major U.S. city costs somewhere between $250,000 and $1 million by the time you've signed a lease, built out a kitchen, hired staff, and survived the first six months of paying for everything before any customer walks in.   • Come back. The single most valuable thing a customer can do is become a regular. The truck owner remembers your face, your order, your situation. That relationship is the foundation of every successful small food business.
  • Talk about it. Tell two friends. Leave a review. Post a photo. Algorithm-feed any working operator runs on social proof, and a steady drip of genuine word-of-mouth is worth more than any paid ad they could afford.
