Alabama's food trucks orbit around Birmingham, Huntsville, and Mobile — three cities with three very different appetites. Birmingham's scene leans toward elevated Southern, with operators who often came up through the city's white-tablecloth restaurants and decamped to lower-overhead trucks. Huntsville feeds aerospace workers serious lunches and runs an outsized number of barbecue and burger operators per capita. Mobile is Gulf-Coast through and through — fried seafood, gumbo, po' boys served from trailers that have done it the same way since long before food trucks were trendy. Across the state, the smoke is real and the portions are not symbolic.
