North Dakota's truck scene is anchored in Fargo and Bismarck, with a few summer-seasonal operations in the oil patch. Fargo's scene has grown noticeably with the city's tech and university expansion — there are now serious taco, Mexican, and Vietnamese operators where there were almost none a decade ago. Bismarck's scene leans more traditional with barbecue and burger trucks dominating. The oil patch trucks (Williston, Watford City) serve a captive worker audience at premium prices for huge portions. The short Northern Plains summer is the operating season; the operators who survive run aggressive event schedules from May through September.
