New Jersey's food truck scene runs on commuter density and an outsized Italian-American restaurant tradition. The Newark and Jersey City scenes are aggressive Portuguese, Brazilian, and Cuban — bringing a flavor of the diaspora to street level. The Princeton and Hoboken trucks lean upscale, often staffed by chefs who trained at New York restaurants and decamped across the river. South Jersey has a serious sub-and-cheesesteak culture that holds its own against Philly. New Jersey trucks tend to be unpretentious, generously portioned, and slightly less Instagram-friendly than their Manhattan counterparts. That's a feature, not a bug.
