Pennsylvania's food trucks are mostly a Philadelphia and Pittsburgh story. Philly's cheesesteak truck tradition runs deep, but the more interesting action is in the city's halal carts, taco trucks, and Vietnamese bánh mì operators that feed the office workers around City Hall and the Penn campus. Pittsburgh's scene is younger and rougher around the edges — pierogi trucks, Polish-American comfort food, a serious BBQ contingent in the Strip District. State permitting is fragmented by city, which means each scene developed differently. The trucks tend to be solidly old-school in the best sense.
