California is where the modern American food-truck scene was invented. Roy Choi's Kogi BBQ in Los Angeles fused Korean and Mexican on a single tortilla in 2008 and the format hasn't looked back. The state spans every register — taco trucks in East LA that have been there for generations, ferment-and-foam fine-dining experiments in Oakland, fish-taco operations up and down the coast, and a Bay Area scene shaped by tech-worker lunches and pop-up culture. Permissive city regulations (especially in LA) and a year-round outdoor eating climate make California the country's deepest bench, by a wide margin.
