Louisiana's food truck scene is dominated by New Orleans, with Baton Rouge and Lafayette filling in. New Orleans is a fully serious food city — but the brick-and-mortar restaurants are so dominant that trucks often function as overflow venues for the city's best operators. The Cajun and Creole traditions show up in mobile form (gumbo trucks, po' boy operations, the occasional crawfish boil on wheels). Festival season — Jazz Fest, French Quarter Fest, dozens of smaller events — is when trucks make their money. The food is heavy, the season is long, and the standards are unforgiving.
