Alaska's food truck scene is more interesting than its weather should allow. Anchorage and Fairbanks both have small but serious year-round operations — Korean-Mexican fusion, halal carts catering to the city's growing immigrant communities, and a few salmon-and-reindeer-sausage trucks that lean into the local supply chain. The summer is short and the truck operators know it; the operators who survive run aggressive event schedules during the long-light months. What the Alaskan scene lacks in volume it makes up for in resilience and a captive audience that genuinely appreciates a hot meal served out a window.
